This easy soy sauce chicken recipe features ultra-tender chicken thighs coated in a rich, salty, deeply savory sauce. Made in one pan and ready in just 30 minutes, it's the perfect weeknight dinner main when you want a flavorful homemade meal with minimal effort.
Combine the listed sauce ingredients in a bowl. Whisk until the honey fully dissolves. Set aside.
Rub salt over the chicken thighs for 10 seconds per side. Rinse under cold running water and pat completely dry with paper towels. (Note: The video skips this tenderizing step, but it is highly recommended.)
Heat vegetable oil in a large pan over medium-high heat. Add the chicken thighs skin-side down, sear for 2 minutes without moving, then flip and sear the other side for another 2 minutes.
Pour the prepared sauce mixture into the pan. Reduce heat to medium-low, cover, and simmer for 7 minutes.
Flip the chicken thighs skin-side down, cover, and cook for another 5 to 7 minutes, until the thickest part reaches 165°F.
Turn the chicken skin-side up and spoon the sauce over the meat several times. Remove from heat and garnish with green onions.
