Bouncy udon noodles are stir-fried with tender pork belly, mushrooms, and crisp vegetables in a sweet, savory, and tangy sauce. This easy yaki udon recipe is ready in just 15 minutes in one pan. I quickly soak the udon just until loosened to keep the noodles firm and chewy during stir-frying instead of turning soggy.
In a small bowl, combine all the noodle sauce ingredients until the sugar has fully dissolved and set aside.
Place the udon noodles in a large bowl and cover with boiling water. Soak just until loosened, about 30 seconds. Drain well and do not rinse. Set aside.
Heat vegetable oil in a large pan over medium-high heat. Cook the sliced pork belly until the edges are golden and some of the fat has rendered. Remove the pork belly and set aside, leaving the rendered fat in the pan.
Reduce the heat to medium. Stir-fry the garlic and onions for about 30 seconds until softened. Add the cabbage, mushrooms, and carrots and stir-fry for 2 to 3 minutes until crisp-tender.
Add the udon, prepared sauce, and cooked pork belly. Toss just until the noodles are evenly coated and most of the sauce has been absorbed. Remove from the heat immediately to prevent the noodles from becoming soggy.
Transfer the noodles to a large serving plate, garnish with green onions, and serve immediately.
