Easy 4-ingredient Mango Sago in 30 minutes!

When you need a refreshing dessert, this easy mango sago recipe takes just 30 minutes. The creamy coconut pudding pairs perfectly with sweet fruit. Every single bite delivers a rich, chewy texture that satisfies completely.

  • Fill a medium pot with 5 cups of water and bring to a boil. Reduce to medium heat, add the tapioca pearls, and boil for 10 minutes while stirring occasionally. Turn off the heat, cover with a lid, and let rest on the warm burner for 10 to 15 minutes until the pearls turn completely translucent.
  • Pour the pearls into a fine mesh sieve to drain. Rinse thoroughly under cold running water to wash away excess surface starch. Strain once more to remove all water, then transfer the sago to a large mixing bowl.
  • Pour the coconut milk into the bowl with the tapioca and stir until fully incorporated. If your coconut milk was previously chilled, whisk it well beforehand to recombine the separated fat and liquid, breaking down any solid lumps before mixing.
  • Peel, pit, and slice two of the mangos, transferring the fruit pieces into a blender along with the condensed milk. Blend the ingredients on high speed until completely smooth, then set the purée aside.
  • Take the remaining mango and slice off the wide cheeks as close to the central pit as possible. Score the flesh into clean 1-cm cubes, then use a large spoon to scoop the fruit pieces away from the skin and set them aside.
  • Divide the smooth mango purée evenly among four dessert bowls or serving glasses. Carefully pour the coconut sago mixture directly over the mango layer, then top each portion with the fresh cubed mangos. Garnish with a fresh mint leaf and serve chilled.
