Tender, juicy chicken thighs simmered in a bold, tangy and savory adobo sauce. This easy chicken adobo recipe is ready in just 30 minutes with only 8 ingredients and no marinating needed. I let the vinegar simmer to mellow its sharpness, giving the sauce that delicious tang without an overpowering sour bite!
Heat vegetable oil in a large, deep pan over medium heat. Add the sliced onions and sauté until slightly softened.
Push the onions to the sides of the pan. Place the chicken skin-side down in the center and sear undisturbed for about 3 minutes until golden brown.
Pour in the soy sauce, then add the garlic, peppercorns, bay leaves, and vinegar last. Do not stir after adding the vinegar!
Bring the sauce to a boil, then cover and reduce to medium-low heat. Maintain a gentle simmer for 10 minutes.
Remove the lid and flip the chicken skin-side up. Cover and simmer for another 10 minutes.
Remove the lid and check that the chicken reaches 165°F in the thickest part, avoiding the bone. Simmer longer if needed. Simmer uncovered for 3-5 minutes until the sauce reduces slightly. Avoid reducing it too far, as it can become overly salty. Serve immediately.
