In a small bowl, whisk the listed noodle sauce ingredients until the sugar fully dissolves and set aside.
Bring a large pan of water to a boil over medium-high heat. Blanch the noodles for 20-30 seconds, just until loosened. Drain and set aside.
Heat the vegetable oil in the pan over medium heat. Add the pork belly and cook until lightly browned and some of the fat has rendered
Add the garlic and shrimp. Cook until the shrimp are mostly pink but still slightly translucent in the center.
Increase the heat to medium-high. Add the noodles and sauce, tossing until evenly coated and most of the sauce has been absorbed.
Add the Chinese broccoli, Chinese cabbage, and chicken stock. Toss until combined and the noodles have absorbed the stock. Transfer to a large serving plate.
