Bouncy udon noodles are stir-fried with soft scrambled eggs and Chinese broccoli in a savory soy-based sauce. This easy soy egg udon stir-fry recipe is ready in just 20 minutes in one pan. It's a quick and satisfying meal for busy weeknights, lunch, or dinner.
In a small bowl, whisk together all the noodle sauce ingredients until the sugar and starch are fully dissolved. Set aside.
Place the frozen udon noodles in a large heat-safe bowl and cover with boiling hot water. Soak for 20-30 seconds, just until the noodles loosen. Gently separate them with chopsticks or tongs, then drain well in a colander. Do not rinse with cold running water. Set aside.
Heat 1 tablespoon (15 ml) vegetable oil in a large pan over medium heat. Add the beaten eggs and gently scramble them into bite-sized pieces until just set but still moist. Remove and set aside.
Add the remaining 1 tablespoon (15 ml) vegetable oil to the pan, followed by the Chinese broccoli and garlic. Stir-fry until the stems are tender-crisp and the leaves are wilted.
Add the drained udon. Re-whisk the noodle sauce and pour it into the pan. Toss until the noodles are evenly coated in the sauce and heated through.
Return the cooked eggs to the pan and gently toss with the noodles until combined.
Remove from the heat and transfer to a large serving plate. Then garnish with toasted sesame seeds and serve immediately.
