Ingredients

  • 3 cups cooked short grain rice
  • 12 oz spam low-sodium kind
  • 1 sheet nori
  • 1 teaspoon vegetable oil or any neutral oil

Musubi Glaze

Rice Seasoning

Instructions

  • Mix the sugar, salt, and rice vinegar into the hot cooked rice with a rice paddle. Cover to keep it warm and prevent it from drying out while you prepare the spam.
  • Slice the spam loaf lengthwise into 5 even slices. Wash and reserve the empty spam can to use as a rice mold later.
  • In a small bowl, whisk together the soy sauce, mirin, and sake. Set aside.
  • Heat the vegetable oil in a large pan over medium heat. Fry the spam for 2 minutes per side until golden brown. Pour in the glaze and simmer until it reduces into a thick, glossy syrup that clings to the spam. Transfer to a parchment-lined plate and let cool slightly.
  • Line the reserved spam can with plastic wrap. Divide the warm rice into 5 equal portions. Using a wet rice paddle, add one portion to the can and press firmly into a tight, level block. Lift the plastic wrap to remove the rice block, then repeat with the remaining rice.
  • Cut the nori lengthwise into 2-inch-wide strips. Place a glazed spam slice on each rice block and wrap a strip of nori tightly around the middle. Dampen the edge with water to seal.
