Add the marinade ingredients to a blender or food processor and blend until smooth. Alternatively, finely grate the pear and onion, then mix with the remaining ingredients in a bowl.
Add the thawed, thinly sliced beef to a large bowl and pour the marinade over top. Gently toss with your hands until evenly coated, being careful not to tear the delicate slices. Marinate for at least 30 minutes, or cover and refrigerate for up to 24 hours.
Heat vegetable oil in a large skillet over medium-high heat. Remove the beef from the marinade, letting excess liquid drip off, and cook in small batches to avoid overcrowding the pan. Sear for about 3 minutes until cooked through, with extra time for deeper caramelized edges.
