This easy ginger chicken recipe is a 30-minute dinner packed with bold flavor. Crispy fried chicken pieces are tossed in a sticky, sweet, and intensely gingery sauce for a comforting weeknight meal that's quick to make and better than takeout.
Whisk together the stir-fry sauce ingredients listed above in a small bowl until the sugar has dissolved and set aside.
Dice chicken thighs into 1 1⁄2-inch cubes and transfer to a large bowl. Add soy sauce, fresh ginger, and white pepper, then toss until evenly seasoned.
Sprinkle cornstarch over the seasoned chicken and toss with tongs until each piece is evenly coated.
Heat vegetable oil in a large pan over medium-high heat. Fry the chicken in small batches until golden brown and crispy, flipping halfway, about 6-7 minutes in total. Transfer to a wire rack and set aside. Discard any excess oil from the pan.
