Slice baby bok choy in half lengthwise. Rinse thoroughly under cold water until the leaves are clean. Shake off excess water and let drain. Set aside.
Whisk the listed spicy sauce ingredients together in a small bowl until the sugar mostly dissolves. Set aside.
Heat vegetable oil in a large skillet over medium-low heat. Add minced garlic and sauté for 10 seconds until fragrant but still pale. Do not let it brown.
Increase the heat to medium-high. Add the baby bok choy, pour in the water immediately, and stir-fry for 2 to 4 minutes until the stalks turn vibrant green, the leaves wilt slightly, and the water has fully evaporated.
Pour the spicy sauce over the greens. Toss for 30 seconds until the sauce bubbles and coats the stems. Remove from heat immediately to prevent the bok choy from releasing excess water.
