Whisk the regular soy sauce, oyster sauce, dark soy sauce, toasted sesame oil, minced garlic, chicken stock, and cornstarch until smooth. Set aside.
Add the fresh chow mein noodles to boiling water and blanch for 20 to 30 seconds until fully loosened.
