Quick & Easy Matcha Crepes

Soft, delicious crepes with a wonderful earthy matcha flavour. These quick and easy matcha crepes are the perfect breakfast or dessert to have with nutella and berries! It comes together with simple and minimal ingredients.

Ingredients
 
 

  • 1 teaspoon butter for greasing the pan

Dry Ingredients

Wet Ingredients

  • 1 cup milk or plant-based milk
  • 2 large eggs
  • ¼ cup water cold
  • 2 tablespoon white granulated sugar or maple syrup/honey
  • 1 tablespoon butter melted
  • 1 teaspoon vanilla extract

Instructions
 

  • In a large mixing bowl, whisk together the flour and salt. Sift in the matcha powder and whisk it into the flour mixture.
  • Then add in the wet ingredients. Whisk together until batter comes together. Do not over mix. It should be runny and not thick.
  • Grease a medium size pan (about 8-inches wide) and bring to medium heat.
  • Once pan is hot, pour ⅓ cup into the pan. Swirl the batter to form a thin crepe. If you have a crepe spreader that would be the best tool to help flatten the batter. Fry until the bottom is cooked.
  • Flip over and fry on the other side until cooked. Repeat this for the remaining batter.
  • Enjoy with your favourite toppings, such as nutella, nut butter, maple syrup, honey, sugar and fresh fruit (like bananas or berries).
