Boba Mint Chocolate Mousse (Dairy-Free)

Boba Mint Chocolate Mousse. Smooth, creamy, rich, vegan mint chocolate mousse with chewy brown sugar bobas. Totally indulgent and very easy to make. Made with just 7 ingredients with minimal steps! This recipe is dairy-free.

Ingredients
  

Mousse:

  • 140 grams dark chocolate chips vegan
  • 200 grams oat milk
  • 200 grams heavy coconut milk
  • ½ tsp agar agar powder
  • 30 grams sugar
  • 1 tsp peppermint extract

Bobas:

  • 1 cup store bought bobas boiled according to packet instructions
  • 1 tbsp brown sugar

Instructions
 

  • In a medium size pot, mix together your mousse ingredients. Bring this mixture to a boil over high heat.

  • Boil for 1 minutes, then remove off heat and immediately pour into your silicone molds or cups. Optional: You may run the mixture through a sieve to make the mousse more smooth. Refrigerate mousse for 3-4 hours or overnight.
  • On the day of serving, boil your bobas according to packet instructions or 25 minutes in water. Reduce to medium flame to simmer. Do not cover. Stir every now and now.
  • Remove off heat, cover the pot of your boiled bobas with a lid for another 20 minutes.
  • Strain bobas under warm water.

  • Place the bobas in a bowl and flavour them with brown sugar.

  • Remove your mousse from the molds or leave in cup.
  • Spoon bobas over your mousse (as much as desired). Enjoy!

Note: If you have bobas leftover so store the remainder in the fridge in an airtight container. It will last 4-5 days and you can use it for other recipes.
