This boba mint chocolate mousse is made of dark chocolate, milk, coconut milk, agar agar powder, sugar, and peppermint extract. The dessert is garnished with bobas flavored with brown sugar.
The mint chocolate mousse practically melts in your mouth and the chewy bobas are the perfect contrasting texture to this dessert!
It's a simple Asian-French fusion dessert to impress guests with as the cooking process is so easy! It's foolproof as long as you let the mixture come to a boil to activate the agar agar powder.
You can also make this dessert a day ahead but it's best to prepare the bobas the same day as serving or they turn hard from being refrigerated.
I created this recipe because I love chocolate mousse and how decadent it is. I thought the silky smooth mousse would pair perfectly with bouncy bobas!

For the Chocolate Mousse
- Agar Agar Powder: this is similar to gelatin but it's a vegan ingredient to make a liquid into a jelly. You can find this at most grocery stores or online.
- Dark Chocolate Chips: or substitute with the kind in chocolate bar form and finely chop it into smaller pieces so it melts faster. Or substitute with vegan chocolate chips for a dairy-free option.
- Milk: or substitute with plain oat milk or almond milk for a dairy-free option.
- Whole-fat Coconut Milk: this is usually sold in cans. Avoid using light coconut milk.
- White Granulated Sugar: or substitute with cane sugar.
- Peppermint Extract: to give it that mint flavor. If you're not a fan of mint and chocolate, feel free to omit this ingredient.
For the Bobas
- Brown Bobas: this is a 1-cm chewy round ball about made of tapioca starch, brown sugar and water. Most Asian grocery stores or some online retailers like Amazon will sell this in dried form. You'll need to prepare them according to package directions.
- Brown Sugar: light or dark brown sugar both work to make the bobas sweet. As a last resort, you can substitute with coconut sugar or maple syrup to taste.

- Make sure to bring the chocolate mousse mixture to boiling point to activate the agar agar powder so the mousse can set.
- Run the chocolate liquid through a fine sieve for a smooth texture.
- Stir the bobas occasionally as they boil to prevent them from sticking.
- Let the bobas rest in the hot liquids off heat so they cook through completely and for best texture.
- Don't rinse the cooked bobas under cold water as this can make them harder.
Instructions
Below are step-by-step instructions on how to make Boba Mint Chocolate Mousse:
- In a small pot, whisk together the chocolate mousse ingredients until combined. Bring this mixture to a boil over high heat for 60 seconds, while whisking.
- Remove the pot off the heat and quickly pour it into four small dessert bowls or molds through a fine sieve. Refrigerate for at least 3-4 hours or overnight for the mousse to set.
- Bring a large pot of water to boil over high heat. Add bobas and reduce to medium heat to simmer for 25 minutes, stirring occasionally. Do not cover.
- Remove the pot of bobas from the heat, cover and let bobas sit in their liquids for another 20 minutes. Then strain and rinse bobas under warm water.
- Transfer cooked bobas into a large bowl and mix in brown sugar until combined and dissolved.
- Remove the mousse from the fridge and carefully remove it from the molds or leave in the dessert bowls to serve with the sugared bobas.
Storage
- This dessert is best enjoyed fresh or within the same day because the bobas will naturally lose their chewy texture if stored in the fridge.
- Leftover mint chocolate mouse will last up to 4 days stored in the fridge in an airtight container.
- Freezer-friendly? Mint chocolate mousse does not freeze well.
