Sesame Sausage Udon Stir-fry (30-min. Recipe)

Sesame Sausage Udon Stir-fry. Chewy thick udon noodles stir-fried in a sweet savoury sesame sauce with sausage, egg and leafy greens. An Asian-fusion noodle dish that will keep you coming back from more because it is so delicious! A great option for a quick and easy dinner or lunch. Ready in just 30-minutes or less!

Ingredients
  

  • 1000 grams udon noodles
  • 200 grams breakfast sausages pork maple flavoured, sliced
  • 2 eggs whisked
  • 2.5 cups yu choy or bok choy, chopped
  • 2 stalks green onion finely sliced
  • 1 tsp cooking oil

Noodle sauce:

  • 2 tbsp sesame oil
  • 4 tbsp sweet soy sauce
  • 2 tsp sugar
  • ½ cup chicken stock
  • 2 tsp garlic minced
  • ½ tbsp cornstarch

Optional:

  • 1 stalk green onions for garnish
  • ½ tsp Sesame seeds for garnish

Instructions
 

  • In a small bowl, whisk together ingredients for noodle sauce.
  • In a pot filled with water, bring it a boil and add udon noodles. Blanch them just until loosened and strain immediately.
  • Then in a non-stick pan set over medium heat, add oil followed by sliced pork breakfast sausages. Cook until no longer pink.
  • Add green onions and allow these to cook for 20-30 seconds until fragrant.
  • Next pour in whisked egg. Allow this to cook and then break apart into bite size pieces.
  • Mix in yu-choy and cook until wilted.
  • Throw in udon noodles and add noodle sauce.
  • Mix everything together until it’s combined and noodles are covered in sauce. Sauce should be thickened, not runny. You may need to increase the heat a bit. This should on take a couple of minutes.
  • Remove off heat and serve with more green onions or sesame seeds if desired. Enjoy!
