1000 grams udon noodles 200 grams breakfast sausages pork maple flavoured, sliced 2 eggs whisked 2.5 cups yu choy or bok choy, chopped 2 stalks green onion finely sliced 1 tsp cooking oil Noodle sauce: 2 tbsp sesame oil 4 tbsp sweet soy sauce 2 tsp sugar ½ cup chicken stock 2 tsp garlic minced ½ tbsp cornstarch Optional: 1 stalk green onions for garnish ½ tsp Sesame seeds for garnish
In a small bowl, whisk together ingredients for noodle sauce.
In a pot filled with water, bring it a boil and add udon noodles. Blanch them just until loosened and strain immediately.
Then in a non-stick pan set over medium heat, add oil followed by sliced pork breakfast sausages. Cook until no longer pink.
Add green onions and allow these to cook for 20-30 seconds until fragrant.
Next pour in whisked egg. Allow this to cook and then break apart into bite size pieces.
Mix in yu-choy and cook until wilted.
Throw in udon noodles and add noodle sauce.
Mix everything together until it’s combined and noodles are covered in sauce. Sauce should be thickened, not runny. You may need to increase the heat a bit. This should on take a couple of minutes.
Remove off heat and serve with more green onions or sesame seeds if desired. Enjoy!
