Chinese Green Onion Sauce is a scrumptious and fragrant sauce made of scallions, garlic and parsley or coriander with soy sauce, neutral oil, salt and pepper.
This easy Chinese sauce recipe only takes 5 minutes to make with simple ingredients. It stores well in the fridge for up to 5 days so you can whip it out anytime you want it.
This sauce is very popular in Asia and there are so many renditions of it in each Asian household. This version is one that my mother-in-law passed to me and it's so good that I had to share it! It's pretty much foolproof and you can't mess it up!
We usually prepare this green onion sauce for Chinese hot pot as a dipping sauce, have it over rice or noodles, with meat, in noodle soup and more!
It's such a versatile sauce and the best part is that you can further elevate it by adding chili oil, oyster sauce, or adjust the aromatics to your liking! I also share other sauce recipes below so check them out.
Ingredients

- Fresh Green Onions: make sure these are vibrant green and not yellowing
- Fresh Garlic Cloves
- Fresh Parsley or Coriander: if you're not a fan of either of these herbs, substitute with more green onion and garlic.
- Neutral oil: like avocado oil, sunflower oil, peanut oil, vegetable oil or canola oil with a high smoke point. Avoid olive oil or any heavy scented oils with a low smoke point.
- Regular soy sauce: or substitute with low sodium soy sauce or light soy sauce. If you’re gluten-free, substitute with tamari sauce, coconut aminos or a gluten-free soy sauce of your choice.
- Salt
- White pepper: or substitute with black pepper
Expert Tips
- Make sure to use fresh ingredients as these are the key ingredients to this sauce.
- Dry the herbs with paper towels to prevent any oil splash back.
- Finely chop the herbs for the more pleasant tasting experience.
- Be careful when pouring the oil and stand back in case it splashes back.
Instructions
- Place finely chopped garlic, green onions, parsley or coriander in heatproof bowl (ceramic, glass or steel will work).
- Heat vegetable oil or any neutral tasting oil in a small pot on medium-high heat. Once it begins to smoke, carefully pour the hot oil over the garlic, green onions and herbs.
- Then season with regular soy sauce, salt and pepper and mix well. Serve and enjoy!
- To store: transfer the sauce to a resealable airtight glass container and store in the fridge and it'll last up to 5 days.
Storage
- This sauce lasts up to 5 days stored in an airtight container in the fridge to prevent bacteria growth. You can reheat it in the microwave covered for 30-60 seconds until warm or enjoy it at room temperature.
- Freezer-friendly? You can freeze it and it'll last a few months until you see freezer burn. Just thaw it out and reheat it on the stove top if you want it warmed up.

This sauce pairs well with the following:
- soup noodles or stir-fried noodles
- as a sauce to enjoy with hot pot featuring shabu shabu beef, thinly sliced chicken or pork shoulder, dumplings, fish balls or cuttlefish balls

FAQ
Yes, scallions and green onions are the same thing and it depends on the grocery store on how they choose to label the allium.
I wouldn't recommend it as they will contain excess moisture which can cause a lot of oil splash back and the sauce may be diluted.
Add 1 teaspoon of red chili flakes into the sauce mixture.

Delicious recipe! have made it about a dozen times now, goes really good as a Raveolli topper! Instead of parsley I've been using cilantro or Thai basil, both work really well.
