What are Paprika Roasted Baby Potatoes?
These Paprika Roasted Baby Potatoes feature tender parboiled baby potatoes seasoned with paprika, garlic powder, onion powder, salt, pepper and oil. They're baked in the oven until the skin is crispy on the outside but the inside is soft and fluffy. It's a wonderful root vegetable side dish to any roasts. These baby roasted potatoes with paprika are my go-to baby potato dish as they're packed with tasty flavors, thanks to the Paprika.
Paprika is a delicious seasoning powder made from dried sweet peppers. It's a spice that has such a wonderful sweet smokiness to it. It is one of my favourite ways to dress up a potato making these a great paprika roasted potatoes recipe! When you roast baby potatoes in particular, they taste so good because they are much smaller than your average potato allowing for it to be more crispy on the outside but soft on the inside. Baby potatoes are also easier to prepare as you don't need to peel them since the skin is so soft.
Ingredients
You will need the following ingredients for these oven roasted paprika potatoes:
- Baby potatoes: feel free to use the regular kind or tri-colored kind. It's a matter of personal preference. You can also use regular yellow russet or Idaho potatoes cut into bite-sized pieces.
- Neutral oil: like vegetable oil, avocado oil or any scentless oil with a high smoke point.
- Paprika powder
- Onion powder
- Garlic powder
- Salt
- Black peppers
How to make Paprika Roasted Baby Potatoes
- First preheat oven to 450 degrees F.
- Then in a large pot filled with enough water, bring to a boil. Boil halved baby potatoes in water for 10 minutes, uncovered, until fork tender.
- Optional: Line a baking sheet with parchment paper.
- Next evenly spread boiled potatoes on baking sheet. Allow them to cool down.
- Evenly sprinkle paprika powder, garlic powder, salt and black pepper on top. Drizzle enough vegetable oil over top. Massage spices and oil into potatoes with your hands.
- Bake for 20-25 minutes until golden and crispy. Enjoy with your favorite condiments.
Storage & Reheating
This dish will last up to 4 days stored in an airtight container in the fridge. To reheat, microwave for 2-3 minutes or reheat on the stovetop in a pan on medium heat until hot.

Can I substitute baby potatoes?
Yes, feel free to use yellow russet or Idaho potatoes. These are the best type of potato for baking.
Can I use olive oil to bake potatoes?
I wouldn't recommend using olive oil as it has a low smoke point. It's best to use any neutral oil like vegetable oil, avocado oil or any scentless oil with a high smoke point since we are baking these potatoes at 450 F.
Do you need to rinse baby potatoes?
Baby potatoes and most potatoes should be rinsed under cold warm to remove any dirt from the skin. You can clean the potatoes by rubbing them with your hands under cold running water.
