What is Japanese Egg Sandwich?
Japanese Egg Sandwiches are a scrumptious sandwich made with the fluffiest white bread, creamy egg salad filling with a boiled egg in between. This popular Japanese food is sold at many Japanese convenience stores. Making it very convenient and easy for hungry students and commuters who are looking for a quick bite or light meal for lunch, dinner or breakfast.
This Japanese sandwich truly hits the spot with its creamy egg mixture and soft Japanese bread. Once you have this sandwich, you will never want to make egg salad sandwich any other way. The best part is that this Japanese fluffy egg sandwich is such a simple recipe and comes together with minimal ingredients. The cooking process only takes 15 minutes of your time.
Ingredients
You will need the following ingredients for this easy Japanese egg sandwich recipe.

- Fluffy Japanese Milk Bread: or any fluffy milk bread or even whole wheat bread. Most Asian bakeries sell milk bread slices. Milk bread usually comes in a square shaped loaf. You can usually find this bread at the Japanese market.
- Whole Eggs: I recommend using ones with Omega 3's as they give you more vibrant yolks.
- Japanese mayonnaise or kewpie mayonnaise: or substitute with regular mayo or American mayo
- Salt & Black Pepper
- Scallions or green onions
Note: Most Asian markets will carry most of the Asian specific ingredients.
How to Make Japanese Egg Sandwich
Boil Water
In a small pot, boil your water. Optional Tip: add 1 teaspoon salt and 2 teaspoon white vinegar to the boiling water. This helps make the egg peeling process much easier! Meanwhile, run your eggs under running warm water to bring the shells to room temperature to prevent them from cracking.
Boil Eggs
Slowly add them to your boiling pot of water one by one. Set a timer to boil four of them for 9 minutes and two of them for 8 minutes. Cover with a lid.
Prepare Ice Bath
Meanwhile, prepare an ice water for your eggs.
Remove Eggs & Transfer to Ice Bath
At the 8 minute mark, remove only two eggs and transfer to an ice bath.
At the 9 minute mark, remove the remaining 4 eggs and transfer to an ice bath. Make sure to note which ones are the 8 minute eggs.
Crack & Peel Eggs
Use a spoon to help crack and peel your eggs starting from the base of the egg as there's a little gap between the shell and the egg making it easier for you to dig your spoon to lift up the cracked shell.
Make Egg Salad
Place only 4 of the eggs into a bowl and mash them with a fork. Add your scallions, Japanese mayo, salt and mash it altogether.
Slice remaining eggs
Slice the other two eggs in half with a sharp paring knife.
Fill Bread
Lay two pieces of bread. Place two egg halves face down vertically in the middle of your bread. Spread your egg salad over top evenly. Be careful not to overfill the sandwich or the egg salad can spill out.
Close Sandwich
Close the sandwich with the other piece of bread. Gently push it down. If you push it down hard, all the egg salad will spill out.
Slice off Crust
Slice off the side edges only of your sandwich with a sharp knife. Then turn it 90 degrees.
Rotate & Slice into Thirds
Then slice your sandwich into equal thirds. This reveals the egg in between the layers.
Serve
Enjoy immediately!
Storage
This Japanese egg sandwich is best consumed immediately but if you have leftovers, wrap it tightly in plastic wrap and store in an airtight container in the fridge. It will last up to 1-3 days.
Expert Tips
- Bring cold eggs to room temperature by running them under warm water. This prevents them from cracking in the hot boiling water.
- Add salt and vinegar to boil your eggs. This really makes the egg peeling process much easier and also prevents any cracked eggs from leaking into the boiling water.
- Use a fork to help you mash your egg salad.
- Evenly spread the egg salad across the bread. Do not over load it or it'll spill out from the sides.
- Gently push the bread down on top of the sandwich. But don't press too hard.
- Carefully cut off the crusts but don't cut away too much.
- A sharp knife is really helpful in cutting the eggs and the sandwich into thirds.

Quick & Easy Japanese Egg Sandwich
Ingredients
