    Malaysian chicken curry is a rich coconut-based curry made with tender chicken, aromatics, spices, and vegetables. My version is inspired by gulai ayam, an Indonesian chicken curry that originated in Sumatra and has also become popular in Malaysia.

    This dish reminds me of my trips to Kuala Lumpur, my husband's hometown, and the comforting aroma of my mother-in-law's homemade curry filling the kitchen. I wanted to develop my own version with more vegetables for a more nutritious, well-rounded meal.

    I found that frying the fresh aromatics and spices before adding the liquid develops a deeper, more flavorful curry base than simply simmering everything together.

    Malaysian Chicken Curry

    Ingredients & Substitutes

    Exact ingredient amounts are listed in the recipe card at the bottom of this page.

    • Chicken Thighs: Boneless chicken thighs stay tender and juicy during simmering. Skin-on or skinless both work.
    • Yukon Gold Potatoes: These hold their shape well while releasing enough starch to help thicken the curry. Yellow potatoes also work.
    • Snap Peas: Snow peas or trimmed green beans also work.
    • Red Bell Pepper: Green, yellow, or orange bell pepper also works.
    • Full-Fat Coconut Milk: Use full-fat coconut milk for a rich, creamy curry. Avoid light coconut milk, which will make the sauce thinner. Coconut cream also works but will make the curry richer and thicker.
    • Chicken Stock: I recommend low-sodium chicken stock so you can control the salt level.
    • Vegetable Oil: Or use any neutral cooking oil with a high smoke point, such as canola or refined avocado oil.
    • Salt

    Fresh Aromatics

    • Shallots: Finely chop them so they soften into the curry base. Yellow onion also works.
    • Fresh Ginger: Finely grate or mince it so it blends into the curry base.
    • Garlic: Fresh garlic gives the best flavor, but jarred minced garlic also works.
    • Green Onion
    • Bay Leaves: Leave them whole so they're easy to remove before serving.

    Curry Spice Mix

    • Ground Coriander
    • Chili Powder: Use less or more depending on your preferred spice level.
    • Fennel Seeds
    • Whole Cloves: Leave them whole and remove them before serving.
    • Turmeric Powder
    • Ground Cinnamon
    • Star Anise: Leave it whole and remove it before serving.
    • Ground Nutmeg
    • Black Pepper

    Expert Tips

    • Cut potatoes into even, large chunks: This helps them hold their shape during the 30-minute simmer.
    • Cut the chicken evenly: Keep the chicken pieces uniform so they cook consistently.
    • Stir the spices constantly: They can scorch quickly while frying in the hot aromatic oil.
    • Shake or stir the coconut milk well: This recombines the coconut fat and liquid before adding it.
    • Keep the curry gently simmering: High heat can cause the coconut milk to separate.

    Instructions

    Below are step-by-step instructions on how to make Malaysian chicken curry:

    1. Mix the spices: Combine all the curry spice mix ingredients in a small bowl and set aside.
    2. Fry the aromatics and spices: Heat the vegetable oil in a large pot over medium heat. Once hot, add the shallots, garlic, ginger, and curry spice mix. Stir-fry for 30-60 seconds, stirring constantly, until deeply fragrant.
    3. Coat the chicken: Add the diced chicken thighs and stir-fry for 1 minute, tossing well to coat the chicken in the aromatic spice mixture.
    4. Add the stock and vegetables: Pour in the chicken stock, then add the bell pepper, snap peas, potatoes, and bay leaves. Stir well, cover with a lid, and bring to a boil.
    5. Simmer with coconut milk: Stir in the full-fat coconut milk and bring the curry to a gentle simmer. Reduce to medium-low heat, cover, and simmer for 30 minutes, or until the potatoes are fork-tender and the sauce has thickened. Season with salt to taste.
    6. Garnish and serve: Remove the curry from the heat. Remove the bay leaves, whole cloves, and star anise. Garnish with chopped green onions and serve hot with steamed white rice.

    Storage & Reheating

    • Refrigerator: Store cooled leftovers in an airtight container for up to 4 days.
    • Freezer: Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating. The vegetables will be softer after freezing and reheating.
    • Reheating: Reheat on the stovetop over medium heat for about 5-10 minutes or microwave covered for 2-3 minutes, stirring halfway. Add a splash of water or chicken stock if the curry has thickened too much.

    Pairing Suggestions

    Serve Malaysian curry chicken with:

    • Steamed White Rice: Soaks up the rich curry sauce.
    • Garlic Gai Lan: Fresh greens balance the creamy curry.
    • Malaysian Curry Puffs: Flaky pastries make a crisp starter.

    FAQ

    Why did my coconut milk separate?

    The curry was likely simmering at too high a heat. Keep it at a gentle simmer after adding the coconut milk.

    Can I use russet potatoes?

    Yes, but they break down more easily during the 30-minute simmer. Yukon Gold or yellow potatoes hold their shape better.

    Ingredients
     
     

    • 1 lb skinless boneless chicken thighs diced into 1.5-inch cubes
    • 1 shallot finely diced
    • 1 inch ginger finely minced or grated
    • 4 garlic cloves minced
    • 4 cups chicken stock low-sodium
    • 1 red bell pepper diced
    • 1.5 cups snap peas ends trimmed
    • 2 medium yukon gold potatoes peeled & cut into quarters
    • 2 bay leaves
    • 14 fl oz. coconut milk full fat kind
    • 2 tablespoon vegetable oil or any neutral oil
    • 1 green onion finely chopped for garnishing
    • salt add to taste

    Curry Spice Mix

    • 1 teaspoon ground coriander
    • 1 teaspoon chili powder
    • 1 teaspoon fennel seeds
    • 1 teaspoon ground turmeric
    • 1 teaspoon ground cinnamon
    • ½ teaspoon ground nutmeg
    • ½ teaspoon black pepper
    • 6 whole cloves
    • 2 star anise

    Instructions
     

    • Combine all the curry spice mix ingredients in a small bowl and set aside.

      This is a really nice recipe! I ommitted the stock, potatoes and onions and it still came out really nice. I used coconut cream instead of coconut milk. I just scraped my plate with a piece of ciabatta to get the last bit of sauce since it is so good🤭. Will definitely make it again.

      After reading this, I feel like your husband and I would get along well - I also have a low tolerance for spice (as you very nicely put it).
