What are Chinese Soy Sauce Eggs?
Chinese Soy Sauce Eggs are simply fried eggs with soy sauce and sesame oil drizzled over top. An incredibly simple way to enjoy your eggs in the morning for breakfast or as a main dish. It's so simple I wasn't even sure I wanted to share a recipe for something like this but in Chinese culture, this is something we often eat over steamed rice and with whatever vegetables we have on hand.
Since it's so basic, it's become such a staple in my meal rotation. I always have a carton of eggs in the fridge, leftover rice, soy sauce and sesame oil. So it's sometimes a dish I often rely on when I'm not sure what to make or I am just too lazy to cook.

- Eggs
- Neutral oil: like vegetable oil, avocado oil or any scentless oil with a high smoke point.
- Regular soy sauce: or substitute with low sodium soy sauce or light soy sauce. If you’re gluten-free, substitute with tamari sauce, coconut aminos or a gluten-free soy sauce of your choice.
- Sesame oil: this offers a toasted nutty flavor to the eggs! Don't skip if possible.
How to make Chinese Soy Sauce Eggs
- Heat vegetable oil in a large pan on medium high heat. When the oil is hot enough, crack eggs in the center of your pan. Once the eggs have developed their shape, reduce to medium heat.
- Fry eggs until they develop crispy brown edges and the whites are set while the yolk is still runny. Then drizzle sesame oil over top for extra flavour.
- Drizzle regular soy sauce over the eggs or transfer the eggs to your serving plate and then pour the soy sauce over top of the egg. Serve with rice and your favourite veggies. Enjoy!
Expert Tips
- Source eggs with omega 3's for vibrant yellow yolks.
- Heat a large non-stick pan on high heat for crispy edges. Reduce to medium heat later so the eggs don't burn.
- Fry until edges are crispy brown and the yolk is still runny.
- Do not season the eggs with salt. The soy sauce will be salty enough.

Yes I have and both methods work well but I prefer this method best. I also have tried it with scrambled and that’s very delicious.
