    This earl grey milk tea pudding is a chilled jello-like pudding made with earl grey tea leaves steeped in sweetened milk and set with agar agar powder.

    It's jiggly in texture and fun to eat as you get the flavors of the creamy earl grey milk tea. If you're a tea lover, this is a fun dessert to try!

    Earl grey tea are black tea leaves flavored with bergamot orange oil making it fragrant and absolutely delicious!

    Earl Grey Milk Tea Pudding

    The best part about this pudding is you can make it with simple ingredients. You can also make it in advance if you're serving guests.

    I was inspired to make this because I'm an earl grey fanatic and I share many recipes below that contain this ingredient!

    Ingredients & Substitutes

    Please scroll down to below recipe card for exact measurements. 

    • Milk: or substitute with plain oat, almond, or soy milk for a dairy-free option. Avoid using coconut milk as I find it to be too overpowering in scent and taste.
    • Earl Grey Tea Bag: or substitute with loose-leaf earl grey tea leaves but make sure to place them into a reusable tea bag or strain the milk tea liquid through a tea strainer.
    • Sweetened Condensed Milk: this is a sweet concentrated milk that is thick and creamy in canned form. Or substitute with condensed coconut milk for a dairy-free option.
    • Agar agar powder: or substitute with 1 ½ teaspoon of gelatin powder it's not a 1:1 ratio.

    Suggested Topping Ideas

    • condensed milk or condensed coconut milk
    • ice cream or whipped cream
    • fresh fruit like berries
    • brown sugar bobas

    Expert Tips

    • Use good quality tea that you would enjoy as tea for best taste.
    • Let the milk tea steep until it turns brown over low heat so it doesn't evaporate too quickly.
    • If you see any tea leaves in the liquid, strain them out using a tea strainer.
    • Bring the milk tea liquid to a boil with the agar agar powder to activate it. If you don't bring to boiling point, the jelly won't set.
    • Let the jelly set in the fridge for at least a few hours before enjoying so it can fully set.

    Instructions

    Below are step-by-step instructions on how to make earl grey milk tea pudding:

    1. First in a small pot, add milk, earl grey tea bag and sweetened condensed milk. Bring to a simmer on medium heat, then reduce to low heat, cover and steep for 1 minute until the milk turns brown. If needed, strain the milk tea through a tea strainer to remove any escape tea leaves.Return the liquid to the pot and give it a mix.
    2. Then whisk in agar agar powder and bring to liquid to a boil for 60 seconds to activate the powder. Remove off heat.
    3. Next quickly pour the hot liquid into one small bowl or mold.
    4. Refrigerate overnight or at least 3-4 hours until the pudding has set. Serve cold with fresh fruit and enjoy!

    Storage

    • Leftovers will last up to 3 days stored in an airtight container in the refrigerator.
    • Freezer-friendly? I don't recommend freezing earl grey milk tea pudding as the jelly will change in texture.

    FAQ

    Can I make this in advance? 

    Earl grey milk tea pudding can be made up to 3 days in advance and stored into airtight containers in the fridge. To enjoy, just remove from the fridge and enjoy cold.

    Ingredients
     
     

    • 1 cup milk or plain oat milk for a dairy-free option
    • 2 bags Earl grey tea or 2 teaspoon / 4 g of earl grey or lady grey loose-leaf tea leaves
    • 2 tablespoon sweetened condensed milk or condensed coconut milk for a dairy-free option
    • ½ teaspoon agar agar powder or 1.5 teaspoon gelatine powder

    Instructions

      I used 1/2 teaspoon of gelatin instead of agar agar and it was not hard. i would recommend using 1 teaspoon of gelatin.

      I made this, and it tastes amazing, but I ran into a weird issue. The pudding separated into two weird layers of what looked like the oat solids on top one cloudy clear liquid on the bottom. Could this be a result of the oat milk brand, or maybe I used the agar agar wrong?

        Thank you for making my recipe Elle! Hmm that's an odd issue! But it sounds like it's the oat milk itself if there are oat solids. The brand I used is Earth's Own Oat Milk. The other thing I could think of is that after mixing the agar agar powder into the earl grey milk tea liquid, it wasn't mixed enough so when it was poured into the cup the liquid separated? But honestly it sounds like it the was oat milk. Let me know if the issue persists again with a different oat milk! - Christie
