Sweet and savory bulgogi ground beef wrapped in tender rice and roasted seaweed. This easy bulgogi beef triangle kimbap is a delicious Korean snack or meal to enjoy on the go. I use plastic wrap to shape the rice into triangles without needing a special mold!

Jump to:
Bulgogi beef triangle kimbap, also known as samgak kimbap, is a Korean rice snack filled with seasoned beef and wrapped in roasted seaweed.
Samgak kimbap translates to "triangle seaweed rice" in Korean. It's commonly sold at Korean convenience stores and grocery stores like H-Mart, with fillings ranging from tuna mayo to Spam.
I love grabbing these convenient rice balls when I'm craving something quick, filling, and delicious. They're great for breakfast, lunch, or a snack on the go.

When I make these, I use freshly cooked rice that's still warm because it's easier to shape into triangles that hold together. I also cook off the excess liquid from the bulgogi beef so the filling doesn't make the rice soggy or leak out. Then I fill the rice with the beef, shape it into triangles, and wrap them with nori just before serving to keep the seaweed crisp.
Ingredients & Substitutes
Exact ingredient amounts are listed in the recipe card at the bottom of this page.
- Cooked Short-Grain Rice: I recommend Japanese short-grain rice or Calrose rice because both have a sticky texture that helps the triangles hold together. Avoid long-grain or glutinous rice, as they won't give the kimbap the intended texture.
- Salt
- Ground Beef: I prefer extra-lean ground beef to minimize excess fat in the filling. Or substitute with ground pork or chicken.
- Regular Soy Sauce: Gives the bulgogi beef its savory, umami-rich flavor. Light soy sauce or low-sodium soy sauce also works.
- Brown Sugar: Balances the salty soy sauce with sweetness for that classic bulgogi flavor. Light or dark brown sugar works. Honey can also be used, adjusted to taste.
- Garlic: Adds a fragrant, garlicky flavor to the beef filling.
- Toasted Sesame Oil: Gives the bulgogi beef its signature nutty flavor.
- Vegetable Oil: Or use a neutral oil with a high smoke point, such as canola or refined avocado oil.
- Gim: Plain, unseasoned Korean roasted seaweed sheets for wrapping the rice triangles. Japanese nori also works. Find both at Asian grocery stores.
Expert Tips
- Shape the rice while warm: Let the cooked rice cool slightly until comfortable to handle, but don't let it get cold. Warm rice is easier to shape and holds together better.
- Wet your rice paddle: Lightly wet your rice paddle or silicone spatula before handling the rice to prevent sticking.
- Avoid overfilling the rice: Use about 3 tablespoons of bulgogi beef per triangle so the rice can fully enclose the filling.
- Press the rice gently: Apply enough pressure when shaping the triangles so the rice holds together, but avoid pressing too hard or the rice can become overly compact.
- Wrap with seaweed just before serving: This keeps the nori crisp and prevents it from becoming soft from the moisture in the rice.
Instructions
Below are instructions on how to make bulgogi beef triangle kimbap:

- Season the Rice: Gently mix the salt into the hot cooked rice using a rice paddle. Cover to prevent drying out and let cool slightly until comfortable to handle.

- Cook the Beef: Heat vegetable oil in a large pan over medium heat. Add the ground beef and cook until browned and fully cooked, breaking it into small pieces. Add the minced garlic, soy sauce, brown sugar, and toasted sesame oil. Stir-fry for 2-3 minutes until the excess liquid has evaporated. Remove from the heat and let cool slightly.

- Shape the Rice: Lay a large piece of plastic wrap, about 25 inches long, on a clean, smooth countertop so it stays in place. Wet a rice paddle with water. Divide the seasoned rice into 4 equal portions. Spoon one portion onto the center of the plastic wrap and flatten into a 1⁄2-inch-thick circle.

- Add the Filling: Spoon 3 tablespoons of cooked bulgogi beef into the center of the rice, leaving enough rice around the edges to enclose the filling.

- Form the Triangle: Gather the corners of the plastic wrap and twist them together to form a rice ball. Tuck any exposed beef back into the rice. Gently flatten the wrapped rice ball to about 2 inches thick, then shape it into a triangle using your hands.

- Wrap the Kimbap: Fold 2 full sheets of nori or gim in half and cut along the folds with scissors to make 4 pieces. Place one piece of seaweed vertically on a clean surface, rough side up. Unwrap the rice ball carefully. Position the rice triangle in the upper half with one point facing up. Fold the bottom half of the seaweed over the rice, then fold the corners around the triangle. Repeat with the remaining rice, beef, and seaweed to make 4 triangle kimbap. Serve immediately.
Storage & Reheating
- Refrigerator: Bulgogi beef triangle kimbap is best enjoyed fresh. For the best texture, store the rice balls and seaweed separately to prevent the seaweed from becoming soggy. Wrap each rice ball individually in plastic wrap and refrigerate in an airtight container for up to 2 days. Refrigerate promptly after preparing and don't leave at room temperature for more than 2 hours.
- Freezer: I don't recommend freezing assembled kimbap because the rice and seaweed will change texture.
- Reheating: Remove the plastic wrap, then cover and microwave the rice balls in 1-minute intervals until steaming hot throughout. Wrap with seaweed just before serving to keep it crisp.
Pairing Suggestions
Serve bulgogi beef triangle kimbap with:
- Kimchi: Its tangy, spicy flavor balances the sweet and savory bulgogi beef.
- Korean Cucumber Salad: Adds a refreshing crunch to complement the tender rice and beef.
- Gyeran Mari (Korean Rolled Omelette): Adds a soft, savory egg side for a more filling meal.

Yes! Replace the regular soy sauce with gluten-free tamari or gluten-free soy sauce. Make sure the remaining packaged ingredients are also certified gluten-free if needed.
