How to make Kujirai Ramen
Create Broth
In a shallow pan, add water, instant ramen seasoning, instant dried vegetable flakes, and garlic. Bring to a rolling simmer over low-medium heat. Do not turn heat past this or it’ll evaporate the water quickly.
Cook Instant Ramen
Once the water comes to a low simmer, add instant ramen. Cook instant ramen on each side for about 20-30 seconds.
Loosen Ramen
Loosen noodles and once loosened, create a hole in the center.
Add & Cook Egg
Crack an egg in the middle. Cover with a lid to cook the egg for 1 minute.
Add Sliced Cheese & Green Onions
Once the egg whites are opaque, add sliced cheese and green onions. Cook for 1 more minute. Enjoy!
Storage & Reheating
This dish is best consumed immediately. However if you have leftovers, store them in an airtight container in the fridge and it should be good for up to 2-3 days. To reheat, microwave for 2-3 minutes or reheat on the stovetop in a pan on medium heat until hot.
Expert Tips
- Have ingredients prepared. Since this ramen recipe cooks very quickly in under 3-4 minutes, have all your ingredients prepared and ready to go. You don’t want to have overcooked ramen noodles!
- Do not overcook the ramen.
- Low medium heat is key! Since we are only cooking this ramen in very shallow water, we don’t want to turn the heat so high it evaporates by the time you add your noodles. In fact, if you do, you won’t have enough water to make that creamy sauce.
- Add cheese and green onions after egg cooks. This prevents the cheese from burning allowing it to emulsify with your ramen water to create that creamy sauce. We also don’t want to overcook the green onions as they offer a wonderful aromatic when they’re not as overly cooked.
FAQ
Can I use any brand of ramen?
Any spicy instant ramen will work. I like using Jin Ramen (it’s my go to) or Shin Ramen. Both are Korean brands.
May I add more cheese?
I would not recommend more than 2 slices per 1 pack ramen. Anymore and it will result in an overly processed cheese tasting ramen that is quite off putting. I’ve tried it so trust me on this.
Can I use normal cheddar cheese?
Yes!
May I omit the garlic?
Yes, it’s optional for added flavour.
Can I make this in the microwave?
Yes! You can also make Kujirai ramen microwave friendly by following these instructions:
- Simply add water, instant ramen with the seasoning, dried veggie flakes and garlic (optional) into a large microwave safe bowl.
- Cover it with plastic wrap. Heat it for 1 minute on high. Carefully peel back the plastic wrap and watch for steam.
- Then loosen the noodles and make a well in the middle. Crack the egg into the well and poke a hole in the yolk (to prevent it from exploding).
- Cover with plastic wrap again and poke some more holes into the plastic to allow the steam to escape. Microwave for another 2-2:30 minutes.
- Uncover and layer on the cheese and garnish with green onions. Enjoy!
