I love adding fresh herbs like dill to elevate my scrambled eggs. It always makes them taste so much better and it's also a fantastic way to impress any egg-lovers!
I've been making eggs now for over 20+ years since I was a young girl especially when it was my turn to make breakfast for the whole family. Scrambled eggs were my expertise and I'll share how to make them perfect here!

- Large eggs: if you want a bright yellow omelette, go for free-range eggs with Omega 3's.
- Fresh chopped dill: I would avoid using dried dill.
- Butter of your choice: if you're dairy-free like me, feel free to use a dairy-free butter spread of your choice.

Expert Tips
- Beat them well until smooth. If you want evenly yellow eggs, beat them until smooth until there are no more egg whites. You can use a fork or whisk.
- Finely chop the dill and avoid using the stems if possible.
- Use a non-stick pan. This ensures the eggs don't stick to the pan and it makes for easy clean up.
- Melt the butter so it evenly distributes into the egg mixture.
- Cook eggs on medium-low heat. This is the number one key tip to ensuring perfectly cooked eggs that are not overcooked.
- Once the eggs, take shape after scrambling them pay attention to the moisture level. The eggs should be moist looking (but not runny) and you should remove them from the pan at this point as the residual heat will continue to cook them. They should not be dry or crumbly.
- Season the eggs with salt and pepper after they've cooked. The salt breaks down the eggs and changes the texture of them.
Instructions
Below are step-by-step instructions on how to make dill scrambled eggs:
- In a large bowl, crack your eggs. Add your finely chopped fresh dill along with 1 teaspoon of melted butter. Whisk eggs until well combined.
- In a non-stick pan set on medium-low heat, heat 1 teaspoon of butter and swirl it around to coat the pan. Once butter has melted, pour in the egg mixture. With a spatula slowly stir eggs until they take shape.
- Once the eggs take shape, stir and scramble the eggs. Then fold them over.
- Cook for another 30-60 seconds, they should still look moist but not runny. Immediately transfer to a serving plate. Season with salt and pepper. Garnish with more dill if desired. Enjoy!
Storage
- Leftovers will last up to 4 days stored in an airtight container in the refrigerator. To reheat, microwave for 2-3 minutes until hot or reheat in a pan on medium heat.
- Freezer-friendly? I don't recommend freezing scrambled eggs as they turn rubbery even after reheating them.

FAQ
This can be made in advance and stored in an airtight container in the fridge for up to 4 days. To enjoy, reheat it in the microwave or in a pan on the stovetop on medium heat. Warning: scrambled eggs will lose a bit of their moisture in the fridge and after reheating.
Overcooked eggs can be due to a couple reasons and these include the heat setting being too high or allowing the eggs to sit in the pan for too long.
The heat setting was too low so try increasing the heat setting a bit higher next time.
