Spicy garlic eggplant is a Chinese-style stir-fry featuring tender eggplant coated in a savory, spicy garlic sauce with ginger and chilies.
When I was young, I used to hate eggplant because it was always so mushy - it felt like it would just sit in my mouth. But this Asian eggplant recipe completely changed that for me and I really enjoy it now.

I found that shallow-frying the eggplant until fully tender before briefly tossing it with the sauce gives it the best texture without becoming mushy. The ginger, chilies, and green onions add an aromatic base, while soy sauce, oyster sauce, sugar, and rice vinegar create a savory sauce with a balance of sweetness and acidity.

- Chinese Eggplant: Look for Chinese eggplant at Asian grocery stores and choose firm, glossy ones without soft spots. It has thin skin and tender flesh that cooks quickly. Japanese eggplant works well too.
- Cornstarch: Coats the eggplant to reduce oil absorption and helps it hold its shape. Potato starch also works. Avoid tapioca or arrowroot starch for coating, as they can become sticky and cause the eggplant to clump.
- Vegetable Oil: Or use any neutral cooking oil with a high smoke point, such as canola, refined avocado, or peanut oil.
- Ginger
- Green Onion
- Dried Whole Red Chili Peppers: Adjust the amount based on your preferred spice level. Fresh red chilies also work.

Sauce
- Garlic: Fresh garlic is recommended for the best flavor. Jarred minced garlic works in a pinch.
- Regular Soy Sauce: Light soy sauce also works, or use low-sodium soy sauce for a less salty result.
- Dark Soy Sauce: I prefer using Pearl River Bridge Dark soy sauce as it adds a deeper brown color to the sauce than other brands. Mushroom-flavored dark soy sauce also works.
- Oyster Sauce: Vegetarian stir-fry sauce works as a substitute.
- Cold Water
- Shaoxing Wine: A Chinese cooking wine available at most Asian grocery stores. Substitute with dry sherry.
- White Granulated Sugar: Granulated cane sugar also works.
- Rice Vinegar: Apple cider vinegar works as a substitute.
- Cornstarch: Thickens the sauce into a glossy glaze. Potato or tapioca starch also works for the sauce.
- Crushed Red Chili Flakes: Adjust to your preferred spice level. Sichuan chili flakes or gochugaru also work.
Note: Asian ingredients are typically available at most Asian grocery stores or online.

- Cut evenly sized pieces: This helps the eggplant cook at the same rate.
- Heat the oil properly: Hot oil helps prevent the eggplant from becoming overly greasy.
- Cook until fully tender: Undercooked eggplant can have a firm, rubbery texture.
- Toss the eggplant gently: Use two spatulas to coat it without breaking the tender pieces.
Instructions
Below are step-by-step instructions on how to make Chinese spicy garlic eggplant:

- Make the sauce: Whisk all the sauce ingredients together in a small bowl until the cornstarch is completely dissolved. Set aside.

- Prepare the eggplant: Slice the unpeeled eggplant lengthwise into quarters, then cut into 2-inch long pieces. Transfer to a large mixing bowl and toss with cornstarch until evenly coated.

- Fry the eggplant: Heat 4 tablespoons of vegetable oil in a large pan over medium-high heat until shimmery. Fry the eggplant until golden brown and completely tender, then remove from the pan and set aside.

- Sauté the aromatics: Reduce the heat to medium-low. Add the remaining vegetable oil, ginger, dried red chilies, and green onions. Stir-fry for 10 seconds until fragrant.

- Finish the dish: Whisk the sauce again to redistribute the cornstarch. Return the eggplant to the pan and pour in the sauce. Gently toss until the sauce thickens into a glossy glaze that evenly coats the eggplant. Remove from heat and serve immediately.
Storage & Reheating
- Refrigerator: Store leftovers in an airtight container for up to 4 days.
- Freezer: I don't recommend freezing this dish because the eggplant can become mushy after thawing.
- Reheating: Reheat in a skillet over medium heat for 3-5 minutes or microwave for 1-2 minutes until hot throughout.
Variations
- Gluten-Free: Use gluten-free soy sauce or tamari instead of regular soy sauce, gluten-free dark soy sauce instead of regular dark soy sauce, gluten-free oyster sauce, and dry sherry instead of Shaoxing wine.
- Non-Spicy: Omit the dried red chilies and crushed red chili flakes for a mild garlic eggplant.
Pairing Suggestions
Serve this Asian spicy garlic eggplant with:
- Egg Fried Rice: Savory rice to round out the meal.
- Sweet and Sour Chicken: Crispy, tangy chicken for contrast.

FAQ
I don't recommend it. Globe eggplant has thicker skin, larger seeds, and a softer texture than Chinese eggplant, so it won't give the same result.
The eggplant may be overcooked or cut too small. Cut it into even 2-inch-long pieces, cook just until fully tender, and toss gently with the sauce to prevent it from breaking apart.
The cornstarch may have settled before the sauce was added. Whisk the sauce again immediately before pouring it into the hot pan.

This has become a favourite in our household. Just two of us so we have it with rice as a main course. I don’t add the sugar or cornflour to the sauce. If I don’t have shoaxing wine I substitute with mirin. Recipe works all the time.
