The key to a balanced sauce is not stirring after you add the vinegar (this is important). This gives the vinegar time to simmer and lose some of its sharpness, while the sauce naturally comes together on its own.

- Skin-on Bone-in Chicken Thighs: The skin adds richness while the bone-in meat stays juicy as it simmers. Avoid boneless chicken for this recipe since the bones give the sauce more flavor. (Sub: Chicken drumsticks)
- Vegetable Oil: Use a high smoke point oil for clean searing without burning. (Sub: Canola oil or avocado oil)
- Yellow Onion: Adds a little sweetness to balance the salty, tart sauce. (Sub: White onion)
- Regular Soy Sauce: Gives the sauce the right saltiness and color. Avoid dark soy sauce, which will make the sauce too dark and change the flavor. (Sub: Light or low-sodium soy sauce)
- Rice Vinegar: Gives the sauce a clean acidity that isn't too harsh. You can also use white vinegar for a sharper taste or cane vinegar or coconut vinegar for a more traditional flavor.

Instructions
Below are step-by-step instructions on how to make chicken adobo:

- Sauté aromatics: Heat vegetable oil in a medium pan over medium heat. Cook the onions until softened.

- Sear chicken: Make space in the center of the pan. Place the chicken skin-side down and sear without moving for 3 minutes until browned.

- Add liquids and aromatics: Pour in the soy sauce, then add the garlic, peppercorns, bay leaves, and vinegar last. Do not stir. The vinegar will taste sharp at first but will mellow as it simmers.

- Simmer covered: Bring to a boil, then cover and reduce to low-medium heat. Maintain a steady simmer for 10 minutes.

- Flip chicken: Remove the lid and flip the chicken skin-side up. Cover and simmer for another 10 minutes.

- Check and thicken: Remove the lid and check that the thickest part of the chicken has reached 165°F. If needed, continue simmering until cooked through. Simmer uncovered for 3-5 minutes until the sauce thickens. Remove from heat and serve.

- Gluten-free: Swap the regular soy sauce for equal amounts of certified gluten-free soy sauce or tamari.
- Spicy twist: Add sliced red bird's eye chilies or dried chili flakes with the peppercorns for heat.

- Reheating: Microwave for 2-3 minutes until hot throughout, or reheat in a pan over medium heat with a splash of water to loosen the sauce for 5-7 minutes.
FAQ
Yes, but you don't need to. This recipe skips marinating to save time. If you want to marinate the chicken overnight in the soy sauce, vinegar, and aromatics, remove it from the marinade before searing. Add the marinade when the recipe calls for the liquids and make sure it comes to a boil before simmering.
Stirring the vinegar can leave the sauce tasting too sharp. Add the vinegar last, don't stir, and let it naturally simmer so the sharpness mellows as it cooks.
I don't recommend it. Chicken breast can dry out during the 20-minute simmer, while bone-in chicken thighs stay much juicier.

This is one of my favorite dishes to make and I make it at least once a week! I did switch up the measurements for the soy/coconut aminos and vinegar and tend to like it a little bit better this way but have had it the original way as well! I put the recommended amount of vinegar but it was so acidic to my liking. What helped to balance was adding a sweetener like agave or brown sugar. If it still tasted acidic I diluted it with water. It came out good. I think next time I’m going to add less vinegar n a little more soy sauce.
