    • 📖 Recipe

This Filipino chicken adobo recipe comes from 7 years of kitchen testing. I still remember my first time watching how to make it and being fascinated by how simple ingredients could create such a flavorful dish!

The key to a balanced sauce is not stirring after you add the vinegar (this is important). This gives the vinegar time to simmer and lose some of its sharpness, while the sauce naturally comes together on its own.

    Chicken Adobo

    Why It Works

    • Vinegar ratio: The 2-to-1 mix of vinegar and soy sauce keeps the sauce tangy without tasting too tart.
    • Bone-in thighs: Bone-in chicken thighs stay juicy during simmering and give the sauce more richness.
    • Chicken sear: Browning the chicken first gives the adobo a deeper, more savory flavor.

    Ingredients & Substitutes

Exact ingredient amounts are listed in the recipe card at the bottom of this page.

    ingredients to make chicken adobo
    • Skin-on Bone-in Chicken Thighs: The skin adds richness while the bone-in meat stays juicy as it simmers. Avoid boneless chicken for this recipe since the bones give the sauce more flavor. (Sub: Chicken drumsticks)
    • Vegetable Oil: Use a high smoke point oil for clean searing without burning. (Sub: Canola oil or avocado oil)
    • Yellow Onion: Adds a little sweetness to balance the salty, tart sauce. (Sub: White onion)
    • Regular Soy Sauce: Gives the sauce the right saltiness and color. Avoid dark soy sauce, which will make the sauce too dark and change the flavor. (Sub: Light or low-sodium soy sauce)
    • Rice Vinegar: Gives the sauce a clean acidity that isn't too harsh. You can also use white vinegar for a sharper taste or cane vinegar or coconut vinegar for a more traditional flavor.
    • Garlic: Use fresh sliced cloves so you get pieces of garlic throughout the sauce.
    • Whole Black Peppercorns: Use whole peppercorns for a distinct peppery bite. Ground black pepper can taste too strong in the sauce.
    • Dried Bay Leaves

    Expert Tips

    • Pat the chicken dry with paper towels to remove excess moisture and get a better sear.
    • Slice the onions thickly so they hold their shape as the adobo simmers.
    • Watch the final reduction closely so the salty sauce doesn't reduce too far.

    Instructions

Below are step-by-step instructions on how to make chicken adobo:

Sliced white onions softening in warm oil.
    1. Sauté aromatics: Heat vegetable oil in a medium pan over medium heat. Cook the onions until softened.
Chicken thighs browning skin-side down next to cooked white onions.
    1. Sear chicken: Make space in the center of the pan. Place the chicken skin-side down and sear without moving for 3 minutes until browned.
Chicken thighs sitting in a liquid mixture of soy sauce, vinegar, minced garlic, whole peppercorns, and bay leaves.
    1. Add liquids and aromatics: Pour in the soy sauce, then add the garlic, peppercorns, bay leaves, and vinegar last. Do not stir. The vinegar will taste sharp at first but will mellow as it simmers.
Chicken thighs simmering under a liquid surface with floating peppercorns.
    1. Simmer covered: Bring to a boil, then cover and reduce to low-medium heat. Maintain a steady simmer for 10 minutes.
Flipped chicken thighs with browned skins facing up in a bubbling dark brown sauce.
    1. Flip chicken: Remove the lid and flip the chicken skin-side up. Cover and simmer for another 10 minutes.
Thick brown adobo glaze coating cooked chicken thighs and soft onions.
    1. Check and thicken: Remove the lid and check that the thickest part of the chicken has reached 165°F. If needed, continue simmering until cooked through. Simmer uncovered for 3-5 minutes until the sauce thickens. Remove from heat and serve.

    Variations

    • Gluten-free: Swap the regular soy sauce for equal amounts of certified gluten-free soy sauce or tamari.
    • Spicy twist: Add sliced red bird's eye chilies or dried chili flakes with the peppercorns for heat.

    Pairing Suggestions

    • Lumpia: Crispy spring rolls are a great starter with chicken adobo.
    • Steamed white rice: The rice soaks up that salty, tangy adobo sauce.
    • Garlic green beans: Crisp green beans add a fresh crunch that balances the rich chicken.

    Storage & Reheating

    • Refrigerator: Store leftovers in an airtight container for up to 4 days.
    • Freezer: Freeze cooled chicken in a freezer-safe bag for up to 3 months, then thaw overnight in the refrigerator.
    • Reheating: Microwave for 2-3 minutes until hot throughout, or reheat in a pan over medium heat with a splash of water to loosen the sauce for 5-7 minutes.

    FAQ

Can I marinate the chicken beforehand?

Yes, but you don't need to. This recipe skips marinating to save time. If you want to marinate the chicken overnight in the soy sauce, vinegar, and aromatics, remove it from the marinade before searing. Add the marinade when the recipe calls for the liquids and make sure it comes to a boil before simmering.

Why does my chicken adobo taste too sour?

Stirring the vinegar can leave the sauce tasting too sharp. Add the vinegar last, don't stir, and let it naturally simmer so the sharpness mellows as it cooks.

    Can I use chicken breast?

I don't recommend it. Chicken breast can dry out during the 20-minute simmer, while bone-in chicken thighs stay much juicier.

Attempted Chicken Adobo when I was first married and messed it up so bad I never tried it again, until now! This recipe was perfect! I used boneless thighs because that’s all I had and it was delicious! My 25 year avoidance of chicken adobo is over! Thank you

This is one of my favorite dishes to make and I make it at least once a week! I did switch up the measurements for the soy/coconut aminos and vinegar and tend to like it a little bit better this way but have had it the original way as well! The chicken is just so juicy and flavorful and easy! Love it!

I used white vinegar and boneless skinless chicken thighs (what I had). Recipe turned out excellently. I served it with white rice for myself and daughter, and with salad greens for my wife who is avoiding carbs. Delicious and Easy. Thanks!!

Thank you so much for making my recipe and so glad you liked it! I would advise to substitute with the same amount of lbs if you use chicken wings but reduce the cooking time as they will cook faster.

I put the recommended amount of vinegar but it was so acidic to my liking. What helped to balance was adding a sweetener like agave or brown sugar. If it still tasted acidic I diluted it with water. It came out good. I think next time I’m going to add less vinegar n a little more soy sauce.

Ahhhh I love this! Tasted exactly like the dish my neighbor would make as a child so it’s filled with nostalgia for me! I tried a crock pot recipe before and it was delicious but this one was way quicker and still super easy. I did marinade the chicken before❤️
