This cold, refreshing drink is believed to be created in 2012 by Boba Guys, located in San Francisco, after they realized there was nothing like it. It has become a hit since!
When it's strawberry season, I love to elevate my classic matcha latte with fresh strawberries! The sweet strawberries and milk perfectly balance the grassy notes of the matcha and make for a stunning red, white, and green latte.

- My recipe uses plant-based milk, like oat or almond milk, to prevent curdling. However, you can also use dairy milk - just make sure it's very cold and enjoy immediately so it doesn't curdle.

- Strawberries: It's important to use fresh, ripe, and vibrant strawberries for the best taste. I recommend using strawberries during strawberry season, which is May to October. Substitution: Thawed frozen strawberries can work too.
- Matcha Powder: I recommend using ceremonial matcha powder for best results and for a vibrant green color. Substitution: Everyday matcha powder for a more affordable option. Avoid using culinary matcha or you'll get a muddy-green color and the results aren't as tasty.
- Oat Milk: I recommend using plain oat milk so it won't curdle with the fruit. Substitution: Almond milk. You can use dairy milk but make sure it's ice-cold and drink the latte immediately so it doesn't have time to curdle.
- White Granulated Sugar: The fine sugar crystals help crush the berries and pull out the natural sweetness from the strawberries. Substitution: Granulated cane sugar.
- Ice Cubes
- Hot Water: The ideal temperature of the water should be around 176ºF (86ºC) to dilute the matcha. Avoid using boiling water as it can make the matcha taste bitter.
Instructions
Below are step-by-step instructions on how to make a strawberry matcha latte:

- Macerate the strawberries: Add the strawberries and sugar to a tall 16-oz drinking glass. Using a muddler, crush the strawberries until they release their juices and form a purée. (If you don't have a muddler, finely chop or purée them in a blender, then mix with the sugar in a glass).

- Add ice and milk: Add ice cubes over the puréed strawberries, then pour in the milk. Set aside.

- Whisk the matcha with water: Sift the matcha powder into a small bowl. Add hot water (about 176ºF / 86ºC, measured with a digital instant-read thermometer), then whisk in a zigzag motion until frothy, about 30 seconds.

- Assemble the drink: Pour the matcha liquid over the milk. Stir and enjoy!

- Leftover strawberry matcha latte can last up to 4 days when stored in an airtight container in the fridge. Store the strawberry mixture, matcha liquid, and the milk in separate containers and assemble the drink fresh for serving.
- Freezer-friendly? Strawberry matcha latte is not ideal for freezing as the strawberries will change in texture.

This was good and so much cheaper than buying at the restaurant. It was a little heavy on the matcha for my taste but I'll make it again with a smidge less matcha. It might have been the brand I bought or maybe my strawberries weren't set enough.
