    Tomato Egg Fried Rice. Fried rice in a tangy savoury tomato soy-based sauce with luscious eggs and aromatic green onion. A simple dish that is both delicious and satisfying and comes together in just 15 minutes with day old rice. Great as a meal!

    What does it taste like?

    The sweet tomatoes over the soy flavoured rice with those chunky smooth eggs and the aroma of the green onions make this a very simple yet flavourful dish. I always keep coming back to this dish when I have a lot of tomatoes in the fridge.  My fried rice recipe is very comforting because the rice is a little saucy thanks to the tomatoes and seasonings. It’s not a “dry” fried rice for lack of better words.

    In fact, I’ve been making this fried rice multiple times to use up the tomatoes we have growing in our garden, and it’s been such a hit. All you need is tomato, cold leftover rice, eggs, garlic, green onion, dark soy sauce, oyster sauce, ketchup, oil, and sesame oil (optional)! With just 9 ingredients that you’ll most likely have in an Asian pantry.

    Tomato Egg Fried Rice

    Easy to make!

    My Chinese Tomato Egg Fried Rice is easy to make at home. You’re essentially dicing the tomatoes into small pieces and finely chopping the green onion. You’ll also beat your eggs.

    Then in a hot wok or non-stick pan over medium high heat, add oil followed by your beaten eggs. Cook the eggs until they take shape then remove from the pan.

    Add more oil into the pan, followed by green onions and cook for 20 seconds until fragrant. Then add tomatoes and minced garlic. Stir fry everything together and let the juices from the tomatoes evaporate until the pan has no liquids left.

    Add cold rice, dark soy sauce, oyster sauce, ketchup, sesame oil (optional), and the eggs. Mix everything together until each rice granule is coloured brown and is steaming hot. Remove from heat, serve with more green onions, and enjoy!

    Tips

    Below are tips on making a great Chinese tomato fried rice:

    • Use day old cold rice. This will make a huge difference and prevents the rice from going mushy if you were to use fresh warm rice.
    • Make sure to break up the rice before frying. This will reduce cooking time and prevents overcooking the fried rice.
    • Prepare all your ingredients ahead of frying. This will prevent overcooking of the rice as it’s frying in the pan.
    • Dice the tomatoes into smaller pieces so the juices evaporated more easily.
    • Make sure the juices evaporate in the pan or you will end up with a very mushy fried rice.

    Below are frequently asked questions about this Chinese tomato egg fried rice:

    What kind of rice can I use?

    Jasmine rice or short grain sushi rice works well for this recipe.

    What kind of tomatoes should I use?

    Sweet garden, roma or cherry tomatoes work well. I’m using a large garden tomato.

    Can I omit the ketchup?

    You may but it just won’t be as tangy.

    Can I use vegetarian stir fry sauce instead of oyster sauce?

    Yes!

    Can I use gluten free soy sauce?

    Yes, but please use half the portion and add more as needed. Note: that the rice won’t be as dark when using regular soy sauce.

    What does egg do in fried rice?

    The egg in this fried rice gives it more texture and protein! But typically when egg is cooked in fried rice, it gives each rice granule more texture and seals in the moisture of the rice. In my recipe, we are solely using it to give this dish protein and taste.

    What is the best rice for fried rice?

    There are two kinds that I like frying with. For a more drier texture, I like to use long grain jasmine rice. For a more moist texture, I like to use short grain rice like we are in this recipe.

    Do you cook the rice before frying it?

    Yes.

    For this recipe

    You will need the following ingredients for my fried rice with tomato and onion:

    • 3 cups cooked rice; day old cold rice recommended
    • 4 eggs, beaten
    • 1 cup tomato, diced

    • Optional: Diced spam or hot dogs, as much as desired (not shown in video)

    How to make Tomato Egg Fried Rice

    1. Break up your day old cooked rice into granules.
    2. In a hot pan or wok set over medium high heat, add 1 teaspoon cooking oil followed by beaten eggs. Stir and cook eggs until they take shape. Once they take shape and are still moist, quickly remove off heat and transfer to a plate.
    3. Back into the pan, add 1 teaspoon of cooking oil followed by green onions and cook for 20 seconds or until fragrant. (Optional: This is where you may add in spam/hot dogs). Then add diced tomatoes and minced garlic. Mix everything together and allow the juices to evaporate, a few minutes.
    4. Once the juices have evaporated, add rice followed by dark soy sauce, oyster sauce, ketchup, sesame oil (optional) and eggs. Mix everything together until each granule is coloured brown and the rice is steaming hot.  Serve and enjoy with more green onions for garnish (optional)!

      This is the best way to use up those last tomatoes of the summer season! And so unique because you don't see too many Asian recipes with tomatoes!

      This recipe was so good! I used frozen cauliflower rice and added it in at the same time as the diced tomatoes so the liquids would evaporate at the same time. Your seasoning and sauce combo is magical, because once done, I couldn’t even tell it was cauliflower rice! I can’t wait to try it with some Vietnamese Shaking Beef next time (this dish usually calls for tomato ketchup rice). My toddler devoured it without realizing he was eating a ton of cauliflower. Thank you for a great recipe! It’s a keeper!
