This easy tomato egg fried rice features sweet tomatoes over the soy flavoured rice with those chunky smooth eggs and the aroma of the green onions. This makes for a very simple yet flavourful dish. I always keep coming back to this simple meal when I have a lot of tomatoes in the fridge.
My fried rice recipe is very comforting because the rice is a little saucy thanks to the tomatoes and seasonings. It’s not a “dry” fried rice for lack of better words. I’ve been making this fried rice multiple times to use up the tomatoes we have growing in our garden, and it’s been such a hit!
All you need is tomato, cold leftover rice, eggs, garlic, green onion, dark soy sauce, oyster sauce, ketchup, oil, and sesame oil! With just 9 ingredients that you’ll most likely have in an Asian pantry.

- Cooked rice: day old cold rice recommended. I like using jasmine rice or short grain rice. Normal long-grain white rice will work too. I would avoid using basmati rice as it's too soft.
- Large eggs
- Ripe Tomatoes: Sweet garden, roma or cherry tomatoes work well. I’m using a large garden tomato.
- Green onions
- Neutral oil: like avocado oil, sunflower oil, peanut oil, vegetable oil or canola oil with a high smoke point. Avoid olive oil or any heavy scented oils with a low smoke point.
- Garlic
- Oyster sauce: or substitute with vegetarian stir fry sauce
- Ketchup
- Dark soy sauce: this is thicker and darker than regular soy sauce and not the same as regular soy sauce.
- Sesame oil: omit if you're allergic
- Diced spam or hot dogs: optional
Note: Most Asian grocery stores will carry most of the Asian specific ingredients.
Expert Tips
- Use day old cold rice. This will make a huge difference and prevents the rice from going mushy if you were to use fresh warm rice.
- Make sure to break up the rice before frying. This will reduce cooking time and prevents overcooking the fried rice.
- Prepare all your ingredients ahead of frying. This will prevent overcooking of the rice as it’s frying in the pan.
- Dice the tomatoes into smaller pieces so the juices evaporated more easily.
- Make sure the juices evaporate in the pan or you will end up with a very mushy fried rice.
How to make Tomato Egg Fried Rice
- Break up your day old cooked rice into granules with clean hands or rice paddle.
- In a hot pan or wok set over medium high heat, add 1 teaspoon vegetable oil followed by beaten eggs. Stir and cook eggs until they take shape. Once they take shape and are still moist, quickly remove off heat and transfer to a plate.
- Back into the pan, add 1 teaspoon of vegetable oil followed by green onions and cook for 20 seconds or until fragrant. (Optional: This is where you may add in diced spam/hot dogs and cook until golden brown).
- Then add diced tomatoes and minced garlic. Mix everything together and allow the juices to evaporate, a few minutes.
- Once the juices have evaporated, add rice followed by dark soy sauce, oyster sauce, ketchup, sesame oil and eggs. Toss everything together until each granule is coloured brown and the rice is steaming hot. Serve and enjoy with more green onions for garnish (optional)!
Storage & Reheating
Leftovers will last up to 4 days stored in an airtight container in the refrigerator. To reheat, microwave for 2-3 minutes until hot or reheat in a pan on medium heat.

- 3 cups cooked jasmine rice day old

This recipe was so good! I used frozen cauliflower rice and added it in at the same time as the diced tomatoes so the liquids would evaporate at the same time. Your seasoning and sauce combo is magical, because once done, I couldn’t even tell it was cauliflower rice! I can’t wait to try it with some Vietnamese Shaking Beef next time (this dish usually calls for tomato ketchup rice). My toddler devoured it without realizing he was eating a ton of cauliflower.
