    • 📖 Recipe

Growing up, my mom always ordered this dish from the Chinese takeaway across the street from our house. To recreate that nostalgic flavor, I use a thick, molasses-based dark soy sauce that coats the chicken skin and creates a rich, glossy glaze. Under the air fryer's high heat, the sauce caramelizes into a deep mahogany finish, delivering the same smoky, sweet umami flavor as the restaurant version after marinating for just 15 minutes.

    Air Fryer Soy Sauce Chicken

    Why My Recipe Works

    • Surface prep: Pat the chicken dry to remove excess moisture, helping the marinade adhere and coat the skin evenly.
    • Sugar caramelization: High heat caramelizes the honey and dark soy marinade into a glossy, sticky glaze.
    • Moisture retention: Fast air frying helps preserve the chicken's natural juices, keeping the dark meat tender and moist.

    Ingredients & Substitutes

Exact ingredient amounts are listed in the recipe card at the bottom of this page.

ingredients to make this air fryer soy sauce chicken

    Main Ingredients

    • Skin-on chicken thighs: Use bone-in thighs and debone them, or opt for skin-on boneless thighs for convenience.
    • Sesame seeds: Use toasted seeds for a nutty finish.
    • Green onions: Add fresh color and brightness when sprinkled on top.

    Chicken Marinade

    • Regular soy sauce: Provides the essential salty, savory base. (Sub: Low-sodium soy sauce or light soy sauce)
    • Dark soy sauce: Creates the signature mahogany color and glossy glaze. I prefer Pearl River Bridge Superior for its thicker texture and deeper color. (Sub: Dark mushroom soy sauce)
    • Oyster sauce: Adds rich umami depth. (Sub: Vegetarian stir-fry sauce)
    • Honey: Creates a sticky, caramelized coating. (Sub: Brown sugar or light corn syrup)
    • Toasted sesame oil: Adds a nutty aroma and richness.
    • Shaoxing wine: Tenderizes the meat and balances stronger flavors. (Sub: Dry sherry or chicken broth for a non-alcoholic version).
    • Fresh ginger: Adds aromatic warmth. (Sub: ¼ teaspoon ground ginger)
    • Garlic powder: Provides even garlic flavor without burning.
    • White pepper: Adds a traditional peppery finish. (Sub: Black pepper)

Note: These ingredients are typically available at most Asian grocery stores or you can check online.

    Instructions

Below are step-by-step instructions on how to make air fryer soy sauce chicken:

Raw skin-on chicken thigh being deboned on a flat surface.
    1. Debone the chicken: Use a sharp knife to carefully cut around the thigh bone and remove it completely.
Raw chicken thighs thoroughly coated in a dark brown, glossy soy marinade.
    1. Marinate the thighs: Combine the chicken with the marinade ingredients, massage to coat evenly, and rest for 15 minutes.
Marinated soy chicken thighs arranged skin-side up with space between each piece in an air fryer basket.
    1. Arrange the basket: Lightly coat the air fryer basket with cooking spray or line with air fryer parchment paper for easy cleanup. Place the chicken skin-side up in a single layer with space between pieces.
Air fryer cooking soy sauce chicken thighs at 375°F (190°C) for 8-10 minutes.
    1. Air fry the chicken: Cook at 375°F (190°C) for 8-10 minutes without flipping, until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
Sliced caramelized soy sauce chicken thighs on a flat surface.
    1. Rest the chicken: Transfer the thighs to a clean surface and rest for 5 minutes before slicing. Cut into even strips and finish with toasted sesame seeds and chopped green onions.

    Alternative Cooking Methods

    • Oven bake: Place marinated thighs skin-side up in a spacious baking tray, roast at 425°F (218°C) for 15 minutes, and broil at 500°F (260°C) for 3 minutes until edges char.
    • Stovetop pan fry: Heat 1 tablespoon neutral oil in a skillet over medium heat. Sear thighs skin-side down for 5-6 minutes, flip, and cook 4-6 minutes more until fully cooked.

    Expert Tips

    • Avoid using fresh garlic because pieces will scorch and turn bitter under intense convection heat.
    • Trim excess overhanging skin and loose fat to prevent smoky flare-ups inside the basket tray.
    • Choose uniform-sized thighs to ensure all pieces finish cooking at the same time.
    • Keep the skin intact during the deboning process to maintain complete surface coverage.
    • Pour the sweet glaze away from the heating elements when transferring chicken to the basket.

    Variations

    • Gluten-Free Version: Use certified gluten-free soy sauces and oyster sauce, and replace Shaoxing wine with dry sherry or chicken broth.
    • Spicy Version: Add 1-2 teaspoons of red pepper flakes directly to the marinade for extra heat.
    • Lean Protein Option: Swap thighs for boneless chicken breasts and reduce air frying time by 2-3 minutes to prevent drying.

    Pairing Suggestions

This Chinese soy sauce chicken pairs well with:

    • Egg fried rice: Savory, wok-fired grains soak up the leftover honey soy glaze.
    • Garlic bok choy: Crisp, fresh greens balance the rich chicken thighs.
    • Egg rolls: A crunchy starter adds texture contrast to the tender main dish.

    Storage & Reheating

    • Refrigerator: Store cooled chicken leftovers in an airtight container for up to 4 days.
    • Freezer & Thawing: Freeze in a sealed bag for up to 3 months. Thaw overnight in the refrigerator before reheating.
    • Reheating Methods: Reheat in the air fryer at 350°F (177°C) for 5 minutes, bake at 375°F (190°C) for 10 minutes, or sear in a covered skillet over medium heat for 6 minutes.

    FAQ

Can I use boneless or skinless chicken thighs for this recipe?

Yes. Boneless, skinless chicken thighs work well but cook faster than skin-on cuts. Reduce the air frying time to 6-8 minutes at 375°F (190°C) and check that the center reaches 165°F (74°C).

Why did my honey soy marinade burn in the air fryer?

Honey and dark soy sauce contain sugars that can scorch under direct high heat. Keep the air fryer at 375°F (190°C) and avoid adding extra marinade during cooking.

Can I make this recipe using regular soy sauce only?

Yes, but the color and texture will be different. Regular soy sauce provides the salty flavor base, while dark soy sauce creates the signature mahogany color and thicker glaze.

Yes, but I would suggest reducing the air frying time to 6-8 minutes or until an internal temperature of 165 F with a digital thermometer or until juices run clear.

My chicken didn't end up with gorgeous dark glaze yours has, although I used brown sugar - cook longer, change to honey, any suggestions. Would love for the resulting dish to look as good as yours.

Thanks for sharing! Keep in mind that every air fryer is different in terms of heating so in your case I would suggest air frying for a bit longer until you get that dark colour.
