    Brown Sugar Pandan Jelly Milk features an ice cold dessert beverage made of milk, pandan jelly, brown sugar syrup and ice cubes.

    You can easily make this dairy-free by substituting with plain plant-based milk like oat milk or soy milk.

    It's a simple Asian dessert drink without caffeine making it inclusive for all! The taste of the jiggly pandan jelly cubes with the milk and sweet syrup is a match made in heaven!

    Brown Sugar Pandan Jelly Milk

    This is a unique beverage not commonly sold at bubble tea shops. Pandan grass jelly is not a common ingredient, like boba or grass jelly but it's so tasty and can easily be found at Asian grocery stores in cans.

    Pandan grass jelly is often used in South-East Asian desserts or beverages and it's grass jelly flavored with pandan leaf extract.

    I love making this drink whenever I'm craving something sweet and cold. It's a fantastic beverage for the hot summer months. It's incredibly quick and easy to make with minimal ingredients.

    Brown Sugar Pandan Jelly Milk

    Ingredients & Substitutes

    Please scroll down to below recipe card for exact measurements. 

    • Pandan Flavored Grass Jelly: this ingredient is usually canned and found at Asian grocery stores. Or substitute with plain black grass jelly.
    • Milk: or substitute with plain oat milk, soy milk or almond milk. Avoid using coconut milk as it's too overpowering in taste.
    • Brown Sugar: light or dark brown sugar both work.
    • Cold Water
    • Ice Cubes

    Note: Most Asian grocery stores will carry most of the Asian specific ingredients or check online stores, like Amazon.

    Expert Tips

    • Chill the glasses in the fridge so they're ice cold, which will keep your drink cold.
    • Dice the pandan jelly into smaller cubes so they're easier to enjoy!
    • Whisk the brown sugar and cold water so the sugar fully dissolves.
    • Reduce the brown sugar water until it becomes very thick and syrupy. It should be able to stick to the drink glass and harden.
    • When ready to serve, pour your milk at the very end. The brown sugar will melt quickly once the milk is poured in.

    Instructions

    Below are step-by-step instructions on how to make brown sugar pandan jelly milk:

    1. First open the canned grass jelly with a can opener and carefully pop the jelly out onto a cutting board. Dice the pandan jelly into 0.5-inch cubes.
    2. Then in a small saucepan, add brown sugar and whisk in the cold water. Bring this is a boil on medium-high heat and reduce to low heat to reduce and thicken into a thick syrup. The syrup will be ready when it can coat the back of a spoon.
    3. Next prepare four tall drink glasses and add 4 ice cubes into each one.
    4. Then spoon about ¼ cup pandan jelly cubes into each glass.
    5. Next pour 1 tablespoon of the syrup along the wall of each drink glass with a spoon.
    6. Lastly, pour 1 cup milk into glass glass. Mix and enjoy cold!

    Storage

    • Brown sugar pandan jelly milk is best enjoyed fresh or same day of making.
    • Leftovers will last up to 4 days stored into airtight containers in the fridge without ice if possible.
    • Freezer-friendly? I don't recommend freezing brown sugar pandan jelly milk or this will distort the texture of the jelly.

    Brown sugar pandan jelly milk serves well with:

    • other dessert beverages like Brown Sugar Boba Matcha Latte, Strawberry Matcha Latte, or Authentic Thai Iced Tea
    • fruit milks like Korean Banana Milk, Watermelon Milk or Strawberry Milk
    • coffee, tea or milk
    • fresh fruit
    • desserts like cake, pastries, or cookies
    • ice cream or frozen yogurt

    FAQ

    Can I make brown sugar pandan jelly milk in advance? 

    I don't recommend making the finished drink in advance because the ice cubes will melt. This drink is best enjoyed the same day it's made. Alternatively, you can prepare the pandan jellies in advance and storing it in the fridge. Then on the day of serving, make the syrup and assemble the drink as instructed.
