    Brown Sugar Boba Matcha Latte. An iced matcha latte flavoured with a delicious brown sugar syrup with chewy bouncy bobas. The perfect dessert drink to have when you're craving matcha!

    I know it's cold and winter has arrived in Canada but sometimes having a brown sugar matcha latte bubble tea can be so refreshing. Something about that roasted brown sugar taste with that milky matcha really compliments each other so well! And when you top it off with those bouncy bubbles, it's a home run!

    Easy to make

    This brown sugar boba matcha latte recipe is easy to make at home! If you already have bobas pre-boiled and sitting in your fridge, this drink will take you less than 10 minutes to whip up!

    You just need a several ingredients for this matcha latte bubble tea recipe: matcha powder, water, milk of choice, ice, brown sugar, and store bought bobas.

    As for equipment, all you need is a small pot, tall glass, ice cube tray and a whisk. I don't normally use the matcha whisk because I don't own one and honestly I've never had a need for one.

    Where can I buy bobas?

    Bobas can be bought at most Asian grocers in the tea aisle. I purchased mine at H-Mart and T&T carries them as well.

    How long can I store bobas for?

    Unfortunately, you can't keep uncooked bobas in their packaging for a long time (no more than a day) because they contain moisture and they will grow mould if you don't vacuum seal the packaging again.

    So what I can recommend instead is to boil all your bobas at once, strain them and then store them in the fridge in a sealed container. It'll last 4-5 days. Then when you need it again, you can re-boil it until they're soft and it'll be bouncy and chewy.

    Can I store this drink for later?

    I wouldn't storing it in the fridge to consume later because the bobas will go hard. I would advise that you keep the ingredients separate and when you're ready to have this drink again, you can reheat the brown sugar and bobas in a pot.

    For this recipe

    You will need the following brown sugar boba matcha latte ingredients:

    • ⅓ cup bobas
    • ¼ cup brown sugar
    • ¼ cup water
    • 2 tsp matcha powder
    • ½ cup hot boiling water
    • ¼ cup oat milk
    • Ice

    How to make matcha latte bubble tea with brown sugar

    In a small pot filled with water, bring it to a boil. Add your bobas in and boil according to packet instructions. Stir immediately to prevent the bobas from sticking and make sure to stir every now and then.

    *If your packet is missing instructions, mine advised that I boil the bobas for 25 minutes uncovered over medium flame. Then turn off the heat and allow the bobas to sit in the pot of water for another 20 minutes, covered.

    Strain and rinse off with cold water to retain bounciness of bobas.

    In another small pot, add brown sugar and ¼ cup water. Bring this to a boil and let this simmer over medium heat until it becomes a very thick syrup. Set aside and keep warm.

    In large measuring cup, whisk together your matcha powder and ½ cup of hot boiling water.

    To assemble your drink, spoon your bobas into the base of the glass.

    Drizzle the brown sugar syrup along the walls of the glass.

    Fill your glass with ice, as much as desired.

    Pour your matcha tea into the glass. Followed by oat milk.
