When it's strawberry season, this is the chilled beverage that I love to make to elevate my classic matcha latte! This iced drink features sweet puréed strawberries combined with the grassy notes of matcha with the creamy milk. It's also stunning to look at with the green, white and red colors!
This drink can be made dairy-free by simply substituting with a plant-based milk that you enjoy, such as oat milk or a nut milk so it's enjoyable for all.
The best part is that this cold refreshing drink requires only several simple ingredients saving you a good $7-8 if you were to buy this popular latte at a bubble tea shop, like at Boba Guys!

- Milk: or substitute with a dairy-free milk of your choice like oat milk, almond milk or a nut milk of your choice. I would avoid using soy milk since it has a stronger taste but if that's what you enjoy, go for it!
- Ice cubes
Strawberry Layer
- Fresh Ripe Strawberries: when shopping for strawberries at the grocery store, make sure to source vibrant red ones that are sweet smelling. These will give you the best tasting latte. It's also always best to shop for strawberries during strawberry season which is during June and July.
- White granulated sugar: or sub with honey. I prefer using white granulated sugar over honey but I know many of you will ask if this works too and it will.
Matcha Layer
- Matcha powder: use what you have but if you're shopping for matcha, you can use culinary matcha which is the most affordable. If you only have ceremonial matcha, you may use that too.
- White granulated sugar: or sub with honey
- Hot boiling water: to help dilute the matcha powder. You'll have a harder time diluting with cold water so make sure it's hot.
What type of Matcha Powder should I use?
There are four different types of matcha powder and they include: culinary, premium, ceremonial and ingredient grade. For this latte recipe, I recommend using culinary matcha as it's cheaper and does the job. Ceremonial matcha powder is very expensive and of the highest quality but if that's all you have and you want to use it, then go for it.
Expert Recipe Tips
Chop the strawberries before sautéing
This helps to break down the strawberries more quickly in the pot. If you actually have a blender, you can pre-blend the strawberries before adding them to the pot so you don't have to immersion blend them.
Don't add ice if you want pretty layers
Ice distorts the layers. I learned this through many attempts at making layered lattes and it's always disappointing when you expect the layers to form as you pour but the ice changes those layers to become big blobs (see image above - the right class). You can always add ice afterwards.
Use a whisk or matcha whisk to mix the matcha liquid
This makes it foamy and frothy and evenly distributes the matcha powder so you don't taste matcha clumps!
Pour layers over the back of the spoon
By pouring the milk or matcha liquid over the spoon of the spoon, this prevents the layer you're pouring over from breaking up as there's less force.
How to make Strawberry Matcha Latte
- In a small bowl, whisk together your matcha layer ingredients until frothy. Set aside.
- In a small pot on medium heat, add diced strawberries, white granulated sugar and sauté until the juices from the berries release, about 2 minutes. Break down your strawberries with a wooden spoon or use an immersion blender. Allow this to cool down completely.
- Then in a large tall glass, pour in the strawberry liquid in. Optional: If you want ice, add it after you've added the strawberry layer but please note: the ice cubes will break up the layers if you're keen on presentation so you have the option to add the ice cubes after mixing the beverage.
- Then over the back of the spoon, slowly pour your milk over the strawberry layer. By doing this, you won't break up the strawberry layer.
- Then pour your matcha liquid over the back of the spoon as well. Mix and enjoy!
Storage
This latte is best consumed immediately or same day. Leftover latte can last up to 4 days stored in an airtight container or mason jar in the refrigerator. If you're planning to make this in advance, I would suggest storing each of the components in separate airtight containers and assemble on the day of.
