This easy shrimp omelette features seasoned eggs scrambled with bouncy shrimp and green onions. You may find this tasty egg dish served at Chinese restaurants.
It's a common staple dish in many Chinese households because it comes together fast with simple ingredients in one-pan! You can also make large batches if you're feeding a lot of mouths.
This Chinese shrimp omelet is best served with steamed rice and vegetables and a great source of protein packed with Omega'3s. Also a fantastic way to add seafood to your diet.
My mother used to cook this dish for our family of five. It was the fastest way to get dinner on the table as she always had eggs and frozen shrimp in the freezer.
She liked to brown the omelette more but I'm sharing the silky version. Both are equally scrumptious and this dish reminds me so much of my mother.
Ingredients & Substitutes

- Large Eggs: for vibrant yellow eggs, get the kind with extra Omega'3s in them.
- Jumbo Shrimp: or substitute with large to extra jumbo shrimp. Avoid using small or colossal shrimp. Get the easy peel deveined kind to make preparation easier and quicker.
- Green Onion: or substitute with ¼ cup finely chopped shallots or onions.
- Regular soy sauce: or substitute with low sodium soy sauce or light soy sauce. If you’re gluten-free, substitute with tamari sauce, coconut aminos or a gluten-free soy sauce.
- Sesame Oil: or substitute with sesame seeds.
- Neutral oil: like avocado oil, sunflower oil, grapeseed oil, peanut oil, vegetable oil or canola oil with a high smoke point. Avoid olive oil that has a low smoke point.
Note: Most Asian grocery stores will carry most of the Asian specific ingredients or check online stores, like Amazon.
Expert Tips
- Source quality and fresh eggs. I like buying the ones with free-run kind with omega 3’s as they have orange yolks for a vibrant omelette.
- Use a type of shrimp that you enjoy. I recommend black tiger shrimp for a juicy and meaty texture.
- Buy pre-peeled and deveined shrimp to make things easier and quicker.
- If the shrimp isn't deveined, make a small slit along the back of the shrimp and pull out the black vein with a toothpick.
- Fry the shrimp until 75% cooked because it'll remain in the pan with the eggs.
- Reduce the heat to low when cooking the eggs and do not raise the heat or it will overcook the shrimp and eggs.
- Give the egg mixture another mix before pouring it into the pan so the green onions are evenly distributed.

Below are step-by-step instructions on how to make Chinese shrimp omelette:
- In a medium-size bowl, beat eggs, green onions, regular soy sauce and sesame oil together until smooth for about 30 seconds.
- Then heat vegetable oil in a large pan on medium heat. Fry the shrimp until slightly pink and curled, about 75% cooked. Do not overcook.
- Reduce to low heat. Mix the egg mixture again before pouring it into the pan. Then let the eggs set in the pan.
- Next slowly scramble the eggs with the shrimp until the eggs are shiny, moist and cooked through. Or you can continue cook the eggs until the omelette is golden brown for extra flavor. Slice the omelette onto a large serving plate and enjoy!
Storage
- Leftovers will last up to 4 days stored in an airtight container in the refrigerator. To reheat: microwave for 2-3 minutes until hot or reheat in a pan on medium heat.
- Freezer friendly? I don't recommend freezing cooked shrimp omelette because the eggs and the shrimp will turn rubbery.

Chinese shrimp omelet serves well with:
- starters like egg rolls, crab rangoons, egg drop soup, hot and sour soup
- white or brown rice, cauliflower rice, or fried rice
- chow mein, lo mein, plain noodles, soup noodles

Chinese shrimp omelette can be up to 4 days in advance and stored in an airtight container in the fridge. To reheat, microwave or in a pan on the stovetop on medium heat.
