Fluffy Chocolate Banana Muffins
Fluffy Chocolate Banana Muffins. Bakery style oat-based fluffy banana muffins with delicious chocolate chips. Perfect for dessert or as a snack!

- 1 cups all-purpose flour
- 1 ¼ cup rolled oats blended into a fine flour
- ½ cup cane sugar
- 1 tsp baking soda
- 1 ½ tsp baking powder
- 1⁄4 tsp salt
- 4 bananas mashed
- 1 egg
- 1⁄3 cup coconut oil melted
- 1 tsp vanilla
- ½ cup mini dark chocolate chips
Preheat oven to 375 degrees F. Blend rolled oats in a blender into a fine flour.
In a large bowl, whisk together dry ingredients.
In another bowl, mash bananas and add remaining wet ingredients except for chocolate chips.
Add wet mixture into dry ingredients along with ¼ cup of chocolate chips. Mix until combined, but do not over mix.
Fill greased muffin pan until full. Top off with remaining chocolate chips. Bake for 20-25 minutes until a wooden toothpick comes out clean.
