Ingredients

Dry:

  • 1 cups all-purpose flour
  • 1 ¼ cup rolled oats blended into a fine flour
  • ½ cup cane sugar
  • 1 tsp baking soda
  • 1 ½ tsp baking powder
  • 1⁄4 tsp salt

Wet:

  • 4 bananas mashed
  • 1 egg
  • 1⁄3 cup coconut oil melted
  • 1 tsp vanilla
  • ½ cup mini dark chocolate chips

Instructions

  • Preheat oven to 375 degrees F. Blend rolled oats in a blender into a fine flour.
  • In a large bowl, whisk together dry ingredients.
  • In another bowl, mash bananas and add remaining wet ingredients except for chocolate chips.
  • Add wet mixture into dry ingredients along with ¼ cup of chocolate chips. Mix until combined, but do not over mix.
  • Fill greased muffin pan until full. Top off with remaining chocolate chips. Bake for 20-25 minutes until a wooden toothpick comes out clean.
